This summer I was fortunate enough to go on a culinary tour through Israel. The first tour was in the upper Galilee and the second in Jerusalem. We purchased fresh spices/foods in the shuk. It was so much fun. And man was the food amazing!!
In this post I share a complete treat for your taste buds with all sorts of spices, tomatoes and eggs to really create a unique and unforgettable meal that everyone is going to go nuts for. It’s full of protein and fresh vegetables and spices Even my kids love it!
To be honest, I like to experiment with this one every time I make it and I mix up my spices in so many ways. Sometimes I go spicy, other times I go for something mild. You know what makes this special is the love you put into it. So be you and do your thing. You and your family are going to love it because it contains your heart and soul.
- olive oil
- 3 to 6 whole tomatoes
- 1 whole red pepper
- 1 whole white onion
- 2-3 cloves garlic
- 2-3 whole eggs
- 1 tsp sweet paprika
- 1/4 tsp black pepper
- 1 tsp salt
- 1 bunch parsley for garnish
Heat your pan with olive oil
Add chopped onion and saute until onions are soft and clear
Add tomato and red pepper and stir until all mixed
Simmer 5 to 7 minutes until it starts to boil
Add hot water
Add eggs one by one and make sure that they are evenly spaced on top of the sauce mixture
Cover the pan and allow to simmer for at least 10 minutes, or until the eggs are cooked to the level that you desire
Garnish the entire pan with chopped parsley as much as you desire
